I have been feeling under the weather pretty much since I got back west in mid-October. I've worked every day, but tomorrow is in doubt. I decided to make some nice chicken soup to see if I could get well enough to go to work. Dammmm, does it smell wonderful!

I started with a medium sized yellow onion, only because they were half the price of the purple onions. Then I have some old, crushed garlic that expired a couple of months ago, but it is still very good so I keep using it. I took a wooden spoon full of that and threw it in with the onion. Then laced it with salt, pepper, and a lot of olive oil. Cooked that till the condo smelled wonderful, then added warm water. When it boiled, I put in a packet of Lipton Soup Secrets noodle soup. I then liberally poured some Tabasco sauce in there and it is currently simmering.

Unfortunately, the only person besides myself who will get to enjoy this chicken noodle soup to die for is Pope, tonight when and if I go to work.

This is the best soup I ever ate...assuming I don't get food poisoning from the expired garlic.

I've found that crushing some fennel seed into chicken soup adds a nice flavor.

Very little cooking gets done around this house with out a heaping spoon of garlic.........which means it is never around long enough to go bad!

I usually use fresh garlic. For some reason, a year or two ago I bought two jars of garlic- one minced and one crushed. Found it and figured I might as well use it since I am clear out of the fresh stuff. This is so good I think I will keep using it till it's gone or I get really sick.

In my experience there is no such thing as too much garlic.  noway I have gotten lazy tho and started to

buy the peeled garlic in the big jar.

You obviously have never had any home cooked food prepared by a Polish Grandma like mine was. You probably even believe that crap they call polish sausage is real polish sausage. Couldn't make any for the holiday's this year because of my broken wrist but rest assured it is nothing like store bought.

I even keep a shaker filled with granulated garlic just in case.

Just bought my duck for Christmas supper. It is thawing so it can be salted and Koshered for 3 or 4 days before roasting to perfection.
