Title: Chili time!
Post by: LVGaryD on October 16, 2013, 02:18:22 PM
Made some chili in the old crockpot yesterday. I glanced at a recipe, then quickly decided to wing it without one. I really don't like beans in my chili and neither does Ryan, so this is what I came up with:

I browned 2.5 pounds of  ground, lean black angus beef and one large diced onion.

Then while that was browning, I trhough all of this stuff into my huge crockpot: one large can of crushed tomatoes, two cans of diced tomatoes, one of which had jalapenos in it, one can of beef stock, one can of corn, a bunch crushed red peppers, two and a half tablespoons of of McCormick chili spice, two tablespoons of cumin.

After the meat and onions browned, I tossed the concoction into the crockpot. Cooked for two and a half hours on high, then added the cup of barley. One more hour on high, then two more on low heat. Damn, laddies- that right there was some good stuff, and I will likely eat it for the next month.

It looks to me like you were making sloppy joes!  You have to have beans, unless you are making it Cincinnati style, which I think is served over pasta.  Made white bean chile last Friday.  Normally I would use 3 kinds of beans in chile: dark red kidney beans, pinto beans and black beans.  I don't use a crock pot.

Beanless chile! slaphead slaphead slaphead

Just like pizza, you Chicago guys apparently know nothing about good chili.  hammerhead1

Here is the truth about chili. Note the following quote: "ask any Texan and they’ll tell you that putting beans in chili is an absolute travesty. In Texas, a bowl full of beans has no right calling itself chili, even when ground meat is thrown in."

Read more here and learn all about real chili. (http://www.marksdailyapple.com/primal-texas-chili/#axzz2i0vZLxZu)

And here is all you need to know about real pizza. (http://www.cocciahouse.com)

I knew it was Bush's fault!  What they know about fine dining in Texas you could write on the back of a postage stamp.

I had pizza in Ohio once.  They put salami or some mystery meat on it.  Tasted like shit!   There are 5 pizza places within 5 miles of my place that have better pizza than any dung they hand out in the Buckeye State.

That wasn't healthy.  It is worse now with corn and soy being in almost everything we eat either directly or indirectly.

Chicago pizza: Make a four inch thick flatbread, throw some tomato sauce on it, and add mozzarella cheese.

Coccia House pizza is made like it is made in Italy, except better. Owner Joe Calabria came over from Sicily. Coccia House pizza is pizza to die for, laddies!

Had plenty of pizza in Italy.  It is not as good as Chicago or New York pizza.  Has very little toppings and not much sauce.  But it would be a blessing for Ohio pizza eaters and now I can see how you would be impressed.  Of course, you most likely would think a Tombstone frozen pizza is great.  Do you ever make corned beef hash in your crockpot?

We don't have tombstone pizza here, just Totino's pizza rolls.

When I was at Lexington around 1980 all the restaurants served chili with macaroni in it. Tasted OK but was something I wasn't used to.

Sounds like chili con carne. They fed us that at school in Ohio when I was real young. Ok before any of your smartasses chime in, it was 50 years ago or so...

Sounds like chili mac to me  idunno  I like different foods, not really a macaroni fan but some homemade

mac & cheese with bacon in it is awesome. Now any pasta with a good homemade red gravy is a whole

different story and probably the cause of me being a "Thick" harness forum blogger.  8)

Chili mac is correct. I was thinking chili con carne, but as I said, it was long ago.

Mutter, we call red gravy spaghetti sauce. Italians and some Polish call it gravy.  ;D

You've had spaghetti right ? It is wonderful  rflmao1 Sorry my bad, if you asked my grandma when

she was making some homemade spaghetti sauce you'd get a long lecture on how and why it was

to be called red gravy. I don't member the lectures but I member the food and damn those Italian

gandmas could cook and loved to shove food into you 24/7. I miss Grammie  redrose

This is for you and Gary, about 1/4 mile from my place there is a place called JOJO's GREAT PIZZA!!!! Better than Romito's AND I"M 100%FBI!!!! (FULL BLOODED ITALIAN!!!!!) I get it at least once a week!!! Actually the place was sold about 6 months ago but the new owners have kept the recipe!! thumbsup heartluv AND I'm going to have to have SIS put her recipe for her sauce. Raviolli, rigatoni, mmm. My doc's can attest for her!! All have said for her to go into business. Actually she has changed it after my heart attack and CHF. It really is heart healthy too.

Puddy, Romito's is closed. It has not been the same since Liz sold the place. I now think Coccia House pizza is the best on Earth.

I've eaten pizza from New York to Florida to Las Vegas. Even ate that crap they call pizza in Chicago. Coccia House is my favorite, though Jo Jo's is good too. thumbsup

Old Gary D knows pizza. I used to work at a place owned by two gangsters from Boston that was named Napoli's Pizzeria. These guys showed me how to make the best pizza in Las Vegas, but they could not show me how to make better pizza than Coccia House pizza.

Joe Calabria's family made the trip from Sicily to the USA, and Joe, now 90 years old, still works there every single day. Nobody makes pizza like Joe Calabria, laddies. Not in Chicago, not in New York, not in Cleveland. Nobody! Not even old Gary D can come close to Joe's pizza....although if I were Joe, I would bake them all on top of corn meal right in the oven without a pizza pan.

Coccia House is the only pizza place on Earth I have waited two and a half hours to get my pizza, and it was worth the wait. 8)
