FWIW, the collared peccary, or javelina, a close relative of the pig family, is considered an outstanding animal to be slow roasted on a spit.

I'm changing the subject...........we used to have our barn fridge in the tack room where it now resides and won't freeze up in the winter and miraculously stores water, beer and pop at a greater rate than previous........... ............anywho...........one summer day I brought in a potato salad and a pork roast I didn't quiet get cooked all the way through and planned on slicing it up and finishing in off on the grill for lunch..........well those plans fell thru so I just left the undercooked pork in the fridge for the next day...............while going over the barn tapes I had the pleasure watching some of our fine upstanding trainers and drivers raid the fridge right around bar closing.........eating the potato salad with their fingers AND one, not mentioning names.......Wyatt Irvine..........chowing right down on RAW pork! 

I left him a message and pointed out the reason he is violently hungover this morning may have nothing to do with alcohol. 


Along those lines.......I just opened up a package of Jimmy Dean sausage to prepare a Sunday morning feast and it smelled sour.......hhmmmmmmm..........how well do I like my family?
